Alluvial soil, calcareous, rich of limestone and clay.Vinification: crushing, destemming and gentle pressing, whitefermentation for 10 days in stainless steel tanks thermo-controlled (16-18°C), aging in stainless steel vats waiting forthe sparkling process.
